4 large roasted red peppers
2 tbsp butter or margarine
1 large red onion, chopped
2 garlic cloves, minced
4 cups chicken broth
1 tbsp lemon juice or gin
Salt to taste
1/2 tsp ground pepper
Fresh basil for garnish

- Melt butter and saute onions and garlic until soft
- Cut peppers into chunks and add to onions and garlic
- Cook for 2-3 minutes
- Add broth, cover, and simmer for 20 minutes
- Add lemon juice or gin
- In a blender or food processor, whirl 1/3 of the mixture at a time until smooth (strain if you wish)
- Season with salt and pepper and garnish with basil
