Roasted Red Pepper Soup

4 large roasted red peppers
2 tbsp butter or margarine
1 large red onion, chopped
2 garlic cloves, minced
4 cups chicken broth
1 tbsp lemon juice or gin
Salt to taste
1/2 tsp ground pepper
Fresh basil for garnish
  1. Melt butter and saute onions and garlic until soft
  2. Cut peppers into chunks and add to onions and garlic
  3. Cook for 2-3 minutes
  4. Add broth, cover, and simmer for 20 minutes
  5. Add lemon juice or gin
  6. In a blender or food processor, whirl 1/3 of the mixture at a time until smooth (strain if you wish)
  7. Season with salt and pepper and garnish with basil
