Cuba Soup

4 carrots
3-4 celery stalks
1 onion
4 green onions
1 cup cabbage
3 cups chicken stock
1 28oz can tomatoes
1 3in piece polish sausage
1-2 tsp Italian seasoning
Olive oil
  1. Fry onion in olive oil
  2. Add finely chopped carrots, celery, green onion, cabbage, and stir
  3. Add tomatoes, seasoning, and sausage
  4. Add stock
  5. Bring to boil and reduce
  6. Simmer for a few hours
