1 3in piece polish sausage
1-2 tsp Italian seasoning
Olive oil

- Fry onion in olive oil
- Add finely chopped carrots, celery, green onion, cabbage, and stir
- Add tomatoes, seasoning, and sausage
- Add stock
- Bring to boil and reduce
- Simmer for a few hours
