Tomato and Feta Salad

3 large tomatoes, sliced
1/2 cucumber
3 tbsp balsamic vinegar
1/4 cup olive oil
Salt and fresh ground pepper
1 tbsp fresh oregano (1 tsp dried oregano)
1 tbsp fresh parsley
1/4 cup green onions
1 clove garlic, finely chopped
1/2 cup feta cheese
Black olives
  1. Arrange tomatoes in a slightly overlapping single layer in shallow serving dish
  2. Season lightly
  3. Slice cucumber; layer on top
  4. Chop herbs and onion; sprinkle on top
  5. Mix dressing with garlic
  6. Spread 1/2 of dressing over top then top with feta cheese and a few black olives
  7. Top with remaining dressing
