Medium head of cauliflower
1/4 cup butter
1/4 cup all purpose flour
1/2 tsp salt
1/8 tsp pepper
2 cups milk
1/2 cup grated cheddar
1/4 cup butter

1/2 cup grated cheddar
- Cook cauliflower in salted water until barely tender
- Drain and place in casserole dish
- Melt butter, mix in flour, salt and pepper, stir in milk till boils and thickens
- Pour mixture over cauliflower (may be too much -> just cover)
- Sprinkle with cheese
- Bake uncovered at 375 until hot and crusty
