Tarragon and Lime-Glazed Chicken

6-8 half chicken breasts, boned and skinned
1/4 cup butter
1/3 cup honey
1/4 cup Dijon mustard
2-3 tbsp chopped fresh tarragon (or 1 tbsp dried)
1/2 lime (juice and finely grated rind)
  1. Place chicken breasts in a shallow baking dish large enough to hold them without crowding
  2. In a saucepan or a large measuring cup, mix remaining ingredients
  3. Bring to a boil on the stove
  4. Remove from heat and pour over chicken
  5. Bake in 350 oven for 20 to 30 minutes, depending on the size of the breasts
  6. Baste occasionally with the sauce to glaze, be careful not to overcook
  7. Chicken is done when no longer pink and juices run clear
