6-8 half chicken breasts, boned and skinned
1/4 cup butter
1/3 cup honey
1/4 cup Dijon mustard
2-3 tbsp chopped fresh tarragon (or 1 tbsp dried)
1/2 lime (juice and finely grated rind)

- Place chicken breasts in a shallow baking dish large enough to hold them without crowding
- In a saucepan or a large measuring cup, mix remaining ingredients
- Bring to a boil on the stove
- Remove from heat and pour over chicken
- Bake in 350 oven for 20 to 30 minutes, depending on the size of the breasts
- Baste occasionally with the sauce to glaze, be careful not to overcook
- Chicken is done when no longer pink and juices run clear
