Rice Casserole

3 to 4 slices bacon
1/2 cup minced onion
1 cup diced celery
1/2 green pepper, chopped (optional)
1 can mushroom soup
1/2 can water
2 cups rice
1 tsp salt

  1. Cook rice
  2. Cook bacon until crisp
  3. Break into crumbs
  4. Cook onion, celery, and green pepper in bacon fat until celery is tender. Drain
  5. Mix all the ingredients in a casserole dish
  6. Bake at 300 for 1 hours.
