Pork Tenderloin in Rum Marinade

3 pork tenderloins

Marinade:
2 tablespoons brown sugar
1/4 cup rum
1/4 cup soy sauce

Sauce:
1/3 cup sour cream
1/3 cup mayonnaise
1 1/2 tsp dry mustard
2-3 green onions, finely chopped

  1. Combine all marinade ingredients in a plastic bag or a glass container
  2. Add tenderloins; marinate for 4 to 5 hours, turning occasionally
  3. Combine sauce ingredients; refrigerate for several hours to allow flavours to blend
  4. Preheat oven to 325
  5. Place a shallow pan of water on bottom rack to ensure moist tenderloins
  6. Remove tenderloins from marinade (reserve marinade) and bake in shallow baking pan for 45 minutes to 1 hour, basting 3 to 4 times
  7. To serve, slice in 1/2″ slices
  8. Bring the marinade to a boil
  9. Offer a choice of sauce and marinade with the meat
