Pork Schnitzel

Flour
Salt
Russian Mustard
2 eggs
2 tbsp water
Equal amounts bread crumbs + parmesan cheese
Some lemon rind
  1. In first bowl, mix flour and 1 tsp salt
  2. Coat pork schnitzel pieces thoroughly
  3. Remove from flour mixture and apply a liberal coat of russian mustard evenly to one side only of the pork schnitzel
  4. In second bowl, beat together 2 eggs and 2 tbsp water
  5. Dip schnitzel in bowl and coat both sides thoroughly
  6. In third bowl, combine bread crumbs, parmesan cheese and rind of 1 lemon finely grated
  7. Coat schnitzel pieces thoroughly on both sides
  8. Fry in a hot skillet in a generous amount of butter with 2 tbsp vegetable oil approximately 3 minutes on each side until cooked
