2 cups halved cherry tomates
1/2 cup chopped fresh basil
2 garlic cloves, minced
3 tbsp olive oil
Salt and pepper to taste
Enough rotini or penne for 2
1 cup grated mozarella cheese
  1. In the morning:
  2. Combine tomatoes, basil, garlic, olive oil, salt and pepper
  3. Cover and leave to marinate on the counter
  4. Dinnertime:
  5. Cook pasta according to package directions
  6. Drain and return to pot
  7. Add marinated veggies (don’t drain) and cheese
  8. Toss and cover and set aside for 5 minutes, until cheeses melt
  9. Place in your favourite pasta bowl and serve immediately
