Grilled Sirloin w/ Coffee & Pepper Crust

2 cloves garlic
1/4 tsp salt
2 tbsp strong, freshly brewed coffee
2 tbsp balsamic vinegar
Ground pepper to taste
2 tbsp whole coffee beans
2 tsp whole black peppercorns
1 lb beef sirloin (1″ thick)
1 tsp olive oil
  1. Smash and peel one of the garlic cloves
  2. Sprinkle with salt and mash into paste
  3. Transfer to small bowl and whisk in brewed coffee and vinegar
  4. Season with pepper
  5. Set aside
  6. Crush coffee beans and peppercorns, mix
  7. Set aside
  8. Cut other garlic clove and rub both sides of steak
  9. Rub oil over surface and coat with peppercorn mixture (press into meat)
  10. Salt the steak and grill until desired doneness (4-5 min per side for med. rare)
  11. Transfer steak to cutting board and let it rest for a few minutes
  12. Carve into thin slices across the grain
  13. Fan meat on plate and drizzle with vinaigrette
