2 cloves garlic
1/4 tsp salt
2 tbsp strong, freshly brewed coffee
2 tbsp balsamic vinegar
Ground pepper to taste

1 lb beef sirloin (1″ thick)

- Smash and peel one of the garlic cloves
- Sprinkle with salt and mash into paste
- Transfer to small bowl and whisk in brewed coffee and vinegar
- Season with pepper
- Set aside
- Crush coffee beans and peppercorns, mix
- Set aside
- Cut other garlic clove and rub both sides of steak
- Rub oil over surface and coat with peppercorn mixture (press into meat)
- Salt the steak and grill until desired doneness (4-5 min per side for med. rare)
- Transfer steak to cutting board and let it rest for a few minutes
- Carve into thin slices across the grain
- Fan meat on plate and drizzle with vinaigrette
