Chorizo Sausage & Chicken

2 tbsp olive oil
12 chicken thighs (bone-in)
750 g chorizo sausage (cut 1 1/2″ chunks)
1 kg potatoes (halved)
2 Red onions (pealed and roughly chopped)
2 tsp oregano
Zest of 1 orange

  1. Put oil in bottom of 2 shallow roasting pans
  2. Rub skin of chicken in oil then turn skin side up (6 in each pan)
  3. Divide chorizo and potatoes between 2 pans
  4. Sprinkle onion, oregano, and zest over
  5. Cook 1 hour in 425 oven — after 20 minute baste
