Orange Gingerbread

1 hour

1 cup orange juice
Rind of 1 orange
1 cup molasses
1 cup butter or margarine
1 cup brown sugar
3 eggs, beaten
2 1/2 cups flour
1 tsp salt
1 1/2 tsp baking soda
1 tsp cinnamon
1 tsp allspice
2 tsp ginger

  1. In blender put OJ and rind. Blend until ground up
  2. In saucepan, melt butter
  3. Add brown sugar and molasses, pour in OJ mix and heat until sugar is dissolved — DONT LET BOIL
  4. Cool then beat in the eggs
  5. Sift dry ingredients over the wet ones and stir only until blended
  6. Pour into large cake pan (9×13) and bake at 325 for about 1 hours

Glaze

1 1/2 cups icing sugar
Enough OJ to make it pour
  1. Mix icing sugar with OJ
  2. Pour glaze over hot gingerbread and spread evenly
