Lemon Squares

20 minutes + 20-25 minutes
1 cup flour
1/4 cup sugar
1/2 cup butter
  1. In food processor, combine flour, butter, and sugar
  2. Mix well
  3. Press into greased and floured 8″ pan
  4. Bake in 325 oven for 20 minutes or until golden

Topping

1 cup sugar
1/2 tsp baking powder
2 eggs, lightly beaten
3 tbsp lemon juice
2 tbsp flour
1/4 tsp salt
2 tsp grated lemon rind
Icing sugar
  1. In food processor, combine sugar, flour, baking powder, salt, eggs, lemon rind, and lemon juice
  2. Mix well
  3. Spread over base and return to 325 oven for 20 to 25 minutes or until nearly set
  4. Let cool in pan
  5. Dust with icing sugar
