1 cup flour
1/4 cup sugar
1/2 cup butter

- In food processor, combine flour, butter, and sugar
- Mix well
- Press into greased and floured 8″ pan
- Bake in 325 oven for 20 minutes or until golden
Topping
1 cup sugar
1/2 tsp baking powder
2 eggs, lightly beaten
3 tbsp lemon juice
2 tbsp flour
1/4 tsp salt
2 tsp grated lemon rind
Icing sugar
1/2 tsp baking powder
2 eggs, lightly beaten
3 tbsp lemon juice
2 tbsp flour
1/4 tsp salt
2 tsp grated lemon rind
Icing sugar
- In food processor, combine sugar, flour, baking powder, salt, eggs, lemon rind, and lemon juice
- Mix well
- Spread over base and return to 325 oven for 20 to 25 minutes or until nearly set
- Let cool in pan
- Dust with icing sugar
