Carrot Cake

40-50 minutes
4 eggs
1/2 cup brown sugar
2 1/4 cups flour
2 tsp baking powder
1 tsp cinnamon
3 cups grated raw carrots
1 cup raisins
1 cup honey
1 cup vegetable oil
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp nutmeg
1 cup walnuts
  1. Beat eggs
  2. Gradually beat in honey and sugar, beating until light
  3. Beat in oil
  4. Mix together flour, baking powder, baking soda, and spices. Stir into batter
  5. Stir in carrots, nuts, and raisins
  6. Put in greased 13×9 pan
  7. Bake at 325 for 40-50 minutes
  8. Cool

Cream Cheese Frosting

125g package soft cream cheese
1 tbsp butter
1 1/2 – 2 cups sifted icing sugar
1 tsp vanilla
  1. Blend cream cheese with all other ingredients until smooth
