4 eggs
1/2 cup brown sugar
2 1/4 cups flour
2 tsp baking powder
1 tsp cinnamon
3 cups grated raw carrots
1 cup raisins
1 cup honey
1 cup vegetable oil
1/2 tsp salt

1 cup walnuts

- Beat eggs
- Gradually beat in honey and sugar, beating until light
- Beat in oil
- Mix together flour, baking powder, baking soda, and spices. Stir into batter
- Stir in carrots, nuts, and raisins
- Put in greased 13×9 pan
- Bake at 325 for 40-50 minutes
- Cool
Cream Cheese Frosting
125g package soft cream cheese
1 tbsp butter
1 1/2 – 2 cups sifted icing sugar
1 tsp vanilla
1 tbsp butter
1 1/2 – 2 cups sifted icing sugar
1 tsp vanilla
- Blend cream cheese with all other ingredients until smooth
