Roasted Garlic & Sundried Tomato Spread

2 large garlic bulbs
1 tsp olive oil
8 oz package cream cheese spread
3 oz feta cheese, crumbled
1 tsp chopped oregano
4 oz sundried tomatoes in oil drained and chopped
    1. Cut off top quarter of garlic heads to expose cloves and arrange in center of large piece of foil
    2. Drizzle each head with 1/2 teaspoon oil and completely enclose in foil
    3. Roast garlic in middle of oven for 15 minutes or until tender
    4. Carefully open foil package and cool garlic
    5. Gently squeeze out bulb from each clove into a large bowl and mash with fork
    6. Add cream cheese and feta and stir
    7. Add oregano and tomatoes
    8. Chill covered at least 2 hours or up to 1 day
    9. Serve at room temperature with crackers
