Cheeslaw

4 cups sliced cabbage
1-2 tbsp butter
1/4 cup onion, finely sliced (optional)
1/2 cup grated cheese
Salt and pepper to taste

  1. Slice cabbage about 1/4 inch wide then chop a bit
  2. Melt butter and saute the onions
  3. Put in the cabbage
  4. Add salt and pepper and stir over low heat until the cabbage is softened and hot but not really cooked (spines should remain almost crisp
  5. Sprinkle the grated cheese over it
  6. Let it soften slightly then stir it to coat the cabbage
