Nana Fitz’s Sodabread as deciphered by Dad

1 tbsp sugar
2 1/2 cup all purpose flour
1 tsp baking soda
1 tsp cream of tartar
1 tsp salt
1 1/4 cup buttermilk
1 full tbsp shortening (liquid)
  1. Preheat griddle to 375 F
  2. Sift all dry ingredients into a bowl and stir
  3. In a separate bowl, whisk buttermilk with shortening
  4. Pour liquid into center of dry ingredients and mix until sticky
  5. Flour surface and roll out to 1/2 inch thickness. Cut into approx 8 pieces
  6. Flour preheated griddle and cook 9 minutes per side
  7. Let cool on cookie rack
