Yogurt Muffins

2 cups yogurt or buttermilk
2 tsp baking soda
1 cup packed brown sugar
2 eggs
1 cup oil
2 cups bran
2 tsp vanilla
2 cups flour (all purpose) or 1 cup all purpose and 7/8 cup whole-wheat flour
4 tsp baking powder
1/2 tsp salt
1 cup unsweetened blueberries, chopped dates, raisins, or nuts etc
  1. Mix yogurt and baking soda, set aside to foam
  2. Beat together sugar, eggs, and oil
  3. Add bran and vanilla
  4. Sift together flour, baking powder, and salt
  5. Add to sugar mixture, alternately with yogurt
  6. Stir just enough to blend ingredients
  7. Fold in fruit
  8. Fill greased muffin tins 3/4 full
  9. Bake at 350 oven for approximately 35 minutes
