2 cups yogurt or buttermilk
2 tsp baking soda
1 cup packed brown sugar
2 eggs
1 cup oil
2 cups bran
2 tsp vanilla
2 cups flour (all purpose) or 1 cup all purpose and 7/8 cup whole-wheat flour
4 tsp baking powder
1/2 tsp salt
1 cup unsweetened blueberries, chopped dates, raisins, or nuts etc

1 cup unsweetened blueberries, chopped dates, raisins, or nuts etc
- Mix yogurt and baking soda, set aside to foam
- Beat together sugar, eggs, and oil
- Add bran and vanilla
- Sift together flour, baking powder, and salt
- Add to sugar mixture, alternately with yogurt
- Stir just enough to blend ingredients
- Fold in fruit
- Fill greased muffin tins 3/4 full
- Bake at 350 oven for approximately 35 minutes
