Cauliflower Au Grati

Medium head of cauliflower
1/4 cup butter
1/4 cup all purpose flour
1/2 tsp salt
1/8 tsp pepper
2 cups milk
1/2 cup grated cheddar
  1. Cook cauliflower in salted water until barely tender
  2. Drain and place in casserole dish
  3. Melt butter, mix in flour, salt and pepper, stir in milk till boils and thickens
  4. Pour mixture over cauliflower (may be too much -> just cover)
  5. Sprinkle with cheese
  6. Bake uncovered at 375 until hot and crusty
