“You Gotta Have Sole”

4 sole fillets (or any white fish)
1/2 cup softened butter
1 cup grated parmesan

  1. Spread half the butter in a shallow baking pan
  2. Sprinkle on half the cheese
  3. Arrange fillets in single layer on top
  4. Dot with remaining butter and sprinkle on the remaining cheese
  5. Bake 400, basting with melted butter and cheese until fish bakes (about 15 minutes)
  6. Serve with drippings
