Bean Salad

19 oz can red kidney beans
19 oz can chickpeas
19 oz can broad beans (green beans alternatively)
1/3 sweet red pepper, diced
1/3 sweet green pepper, diced
1/4 medium red onion, sliced
1/2 cup chopped parsley
1 tsp garlic
1 tsp salt
1/2 tsp black pepper
1/8 tsp cayenne
Juice of 2 large lemons
1/3 cup olive oil
  1. Drain beans, rinse with cold water
  2. Combine beans, peppers, onion, parsley, garlic, and spice
  3. Blend lemon juice and oil and pour over bean mixture
  4. Let sit 1/2 hour
