- In first bowl, mix flour and 1 tsp salt
- Coat pork schnitzel pieces thoroughly
- Remove from flour mixture and apply a liberal coat of russian mustard evenly to one side only of the pork schnitzel
- In second bowl, beat together 2 eggs and 2 tbsp water
- Dip schnitzel in bowl and coat both sides thoroughly
- In third bowl, combine bread crumbs, parmesan cheese and rind of 1 lemon finely grated
- Coat schnitzel pieces thoroughly on both sides
- Fry in a hot skillet in a generous amount of butter with 2 tbsp vegetable oil approximately 3 minutes on each side until cooked
