1 cup orange juice
Rind of 1 orange
1 cup molasses
1 cup butter or margarine
1 cup brown sugar
3 eggs, beaten
2 1/2 cups flour
1 tsp salt
1 1/2 tsp baking soda
1 tsp cinnamon
1 tsp allspice
2 tsp ginger
- In blender put OJ and rind. Blend until ground up
- In saucepan, melt butter
- Add brown sugar and molasses, pour in OJ mix and heat until sugar is dissolved — DONT LET BOIL
- Cool then beat in the eggs
- Sift dry ingredients over the wet ones and stir only until blended
- Pour into large cake pan (9×13) and bake at 325 for about 1 hours
Glaze
1 1/2 cups icing sugar
Enough OJ to make it pour

- Mix icing sugar with OJ
- Pour glaze over hot gingerbread and spread evenly
